To Die for No Fat - Lo GI Chippies - it's True!

Finally........
Hooray!
I have finally mastered yummier than yum, crispy, tasty sweet potato chips - and healthy ones too!
I'm a big sweet potato gal. I just don't like the sludgy feeling white potato gives me.
And I love the fact that sweet potatoes have a lower GI than traditional ones and they're a good source of fiber and Vitamin A.
So, apart from the health preference to white potatoes, I actually prefer the taste.
But.....
I have just had to get used to the softness of them and of being unable  to get a really good CRUNCH!
Until now......
After much research and trial and error, last night I nailed it.
Woohoooooo.....
And thankfully for me and for you, it was quite simple...

Crunchy Healthy No Fat Chippies

1) Firstly peel and chop up your white sweet potato into chippies shapes making sure they're of even size so that they cook evenly. (yes you can do it with orange sweet potato too!)



2) Next you'll cover your chippies in water and leave to soak for 30-60 minutes. The longer the better, this will remove the starch from your sweet potato. After the hour, drain and rinse till the water runs clear then pat dry with paper towels. Try and give them a really good dry then pop back into your bowl.
3) Now, next you'll beat an egg white (or two depending on how many chips your doing) till its soft and frothy. You'll need enough to coat your chippies. I added some paprika to this mixture but you could add whatever spices your like. Chilli powder, garlic powder, onion powder, whatever excites your taste buds. Then pour this over your chippies and mix to coat.



4) How difficult is this recipe - NOT!  Now, pop them into a pre-heated oven on about 220 degrees on a baking tray with your baking paper making sure they're not overlapping or touching each other and that's its kids - easy as huh?

Give them about 15 minutes, then turn them over for about another 10-15? You'll be able to see when they're ready. The thinner the fry, the quicker they'll take.....
And the number one trick for these crunchy chippies....occasionally open the oven door a fraction during cooking to release any steam. For the last 10 minutes I used a folded tea towel over the top of the door to keep it slightly ajar. It will help crisp up the fries more.



And that's it kiddies....crispy - yummy - no fat - low GI - to die for chippies.
You could serve with aioli or a tomato sauce, but it would kinda defeat the purpose of the health option and they are pretty yummy all on their own.

  2. Yum! I am a potato chip freak. I can eat an entire bag mindlessly and would rather potato chips for dessert. I must give these a go!
