To Die for No Fat - Lo GI Chippies - it's True!

Finally........
Hooray!
I have finally mastered yummier than yum, crispy, tasty sweet potato chips - and healthy ones too!
I'm a big sweet potato gal. I just don't like the sludgy feeling white potato gives me.
And I love the fact that sweet potatoes have a lower GI than traditional ones and they're a good source of fiber and Vitamin A.
So, apart from the health preference to white potatoes, I actually prefer the taste.
But.....
I have just had to get used to the softness of them and of being unable  to get a really good CRUNCH!
Until now......
After much research and trial and error, last night I nailed it.
Woohoooooo.....
And thankfully for me and for you, it was quite simple...

The Scrummiest Protein Balls ever!

I'm not what one would call a sweet tooth, but a little treat occasionally I'm definitely up for....
I seem to be on one long diet, watching everything I eat and reading the nutritional content of every packet I buy...
It's been like this my whole life.
I'm the girl that puts on a gram just walking past a bakery :-(
So imagine my surprise when something a little on the healthy+ side came my way.

I've seen the protein balls at local health food shops, but upon inspection, yep, you guessed it, full of sugar, additives, preservatives - crap!
So I spent a bit of time perusing some online recipes, played with them a bit, and came up with my own.
They're all very similar, but after making quite a few batches, I seem to of now come up with what I love the best, and some of it comes down to technique.
I know we all have different taste buds and this may not be your absolute fave, but give it a whirl, mix it up a bit, and you too can come up with one that you'll love.
Having a batch of these in the fridge stops me picking through the day and cures those 3pm snacks we go searching for....
And surprise surprise - Mr OC loves them too!

Scrummy Protein Balls.

(Now my recipes are not exact like you find in a book, I mean, exact measurements, I tend to cook pretty much to taste and feel. So I'll try to give you the best description I can. Will make about 20.)

*A couple of handfuls of whole almonds ~ about 150grams.
*Same of walnuts ~ about 100 grams.
*Large scoop protein powder ~ about 60 grams. {Make sure you use a good quality, high protein, low fat protein powder. We use International Protein Amino Charged WPI as recommended by our trainer.}
*2 Tbs. Cacao Powder
  {you can use cocoa, but this is the healthier option. Available at health food shops, I go to Mrs Flannery's. Your better off changing to cacao powder and using is in place of chocolate. Find out more about cacao powder here.)
*About a tbs of sweetener. You can use whatever you prefer? Vanilla Essence, Natvia, or I use Organic Rice Syrup. It's up to your own health beliefs.
*1 tsp cinnamon powder
*Fresh Dates ~ about 20.
*Water - to bind.
*Shredded Coconut ~ for rolling.
 {Check out the nutritional charts on coconut. So many have unbelievable levels of sugar. This last lot I bought was funnily enough a Woolworths brand one and had the lowest sugar content of all of them?}

Method.

I process the walnuts and the almonds in the food processor a handful at a time and then throw into my mixing bowl.
I then add all the dry ingredients and mix.
I then process my dates till they're almost like play-do.
I add the date mixture to the dry ingredients and rub in with my fingers like I was making a dough, {takes you back to kindy days!!}
Next add your sweetener.
I then add a bit of water, about 1/8 cup, wet my hands, and then bind all the mixture together till it all binds together. If it's not binding, add a touch more water.
Using wet hands, I get about a tbs of the mixture and roll into a ball, roll in the coconut, and put on my tray - and  - voila - thats it!
Pop them in the fridge and enjoy!
No, actually HIDE them in the fridge because your whole family will want to devour every last one.

I make them a bit bigger than a gold ball, saves going back for seconds!

So that's it.
Just wanted to share that with you...
I've always wanted to make them and glad I started to.

Strawberry and Vanilla Friands

Well Xmas is just about here so I decided it was time to get crafty with some edible yummy Xmas gifts.
I love nothing more than giving gifts made with love and delectable ingredients.
And trust me, there is NOTHING more delectable than vanilla bean paste to add to ANYTHING!

So I'm meeting with a couple of girlfriends tomorrow and thought I'd go bearing gifts....yummo.

Lemon Heaven - if god gives you lemons, make Lemoncello!

My new house has a lemon tree.....



Which is kinda cool....
This tree has the most amazing lemons....

Huge.
Succulent.
Juicy.

Straight from my tree - that makes them free....Cool!


But what to do with so many lemons??
Easy.....
Lemoncello

Care of that awesome chick Sarah from A Beach Cottage, my all time fave blog site....what she can't do with vintage finds does not exist....
(I am in the process of turning my very balinese house to white everything just from her inspiration..)

Anyhoo, she loves this Lemoncello stuff, home made of course, so when I was granted this plentiful supply of lemons, what's a gal to do....

and it's soooo easy....

About 10 lemons (depending on the size)
One bottle good quality vodka
3 cups water
2 1/2 cups of white sugar (you can alter depending on your sweet tooth, Sarah uses 3 1/2 but that was a bit sweet for me...so I just added more vodka!!)
That's it!

Easy Peasy Bean Salsa/Chilli Con Queso.

'For My Big Sis' 
(who is the worlds best cook but asked specially for my recipe for this one!)



Now first I have to point out.
I'm not a recipie girl, can't even spell it!
My poisons are normally more of a throw everything in that I'm feeling like at the time, and voila, yumsville arrives...
So when someone asks for one of my recipes, its normally as close to whatever I can remember. (And as cooking in our house always requires copious amount of wine, that can be one difficult task!!)

With this one it's more about whatever I have on hand. It can be tweaked in a million different direction depending on your taste buds.
So here's what I did this week.....

This is my Chilli Con Queso Version...



This is my absolute fave dish at the moment...
Its my 'Easy Peasy' good to go dish to serve up to friends, and is great for those, "Dont bring a thing!" moments. You know those moments, when you know you have to take something....

Being an ol' Coolangatta local....thats one of the Gold Coasts most laid back coolest towns, thus - Cooooolangatta, LOL, we literally lived at, regularly ate at, one of the coast best Mexican restaurants, The Jungle!
Back in its hey day of the 80's (now I'm showing my age) its was the most amazing restaurant called The Rum Jungle, (or if your a real old local you'll remember it before that as Ernie's!!)....Best cocktails ever, ahh, memories, buts that's a whole nother story...anyway, where was I???   Yes, Rum Jungle! Well it was just to die for...memories of my 21st come flooding back, albeit a bit foggy...those cocktails, ahhhhh!


Strawberry Margarita anyone??

It had the same owners then as it has to this day.
Well they moved around the corner from where they started and became just - The Jungle...and mexican!
That was some 21 years ago (I know that because it was where all my pregnancy cravings were satisfied), and its still going strong now - and is still yum!

As we 'frequented' this establishment on a regular basis, friendships were made, recipes exchanged, sometimes the odd key was left for us to lock up when we left???, and my version of they're famous Chilli con Queso was born. 
Its easy to throw together, and depending on what you add, relatively healthy, so thats alway a major plus!

So hi and a massive welcome to my first ever post….funny it should be about food, as Mr OC and I are huge foodies.                                                                                                                          
So I’m thinking this will be a regularly updated page…….our idea of a good time is either,
A) a massive cook-up with friends, or
B) dining out, once again with friends……there’s one thing I love more than good food, and thats good friends……..

“When are they coming honey??? Huh??  in an hour….cooooool???”
So organised ladies, wanna easy peasy throw together simple dish with stuff normally in your pantry?? 
Then read on…
My easy go-to recipe to impress even the die hard meat eater…

Simple ingredients straight from the kitchen!

LENTIL AND ORANGE SALAD
(AND YOU CAN SERVE IT WITH ANYTHING, DUCK, CHICKEN, LAMB RACK – YUM)  
I’ve been throwing this together for years and it just gets better every time – if thats possible… Mr OC swears he ‘does not do legumes’, but somehow I manage to get this one by him, (and his blokey bloke mates), without so much as a raised eyebrow….Often we can’t decide on dinner as we are both huge foodies. Although my taste lends towards healthy, chicken, lean beef, hubby’s leans towards anything with a 1000 calories or more!! Duck, Pork Belly, Rack of Lamb (fat attached), so we can do both here as this will go with ANYTHING! 

Lovely Fresh Watercress – yumm…
So, what do you need:: (for enough for two of you)
3 tsp red wine vinegar 
1 tsp wholegrain mustard
1 tbs oil (I use grape seed oil or lemon myrtle, but whichever takes your taste buds fancy)
400 grams can brown lentils (you could prepare your own, but this is about being quick and handy)
1/2 bunch watercress (you can use spinach leaves or rocket if no rocket available, although it is lovely)
1/2 red onion thinly sliced 
1 orange                                                                                          
So, here’s the easy part……
1. segment the oranges, catching the juice as you do (or if you’ve got some juice in the fridge that’ll work too, about 1/4 cup)…..
2. Add to the juice the vinegar, mustard, oil, pinch of salt n pepper, and whisk to combine..
3. In your salad bowl you’ll toss in the watercress, lentils, (I like to rinse mine first in a colander, gets rid of the gooey stuff), sliced onion and orange segments and your dressing and whoola, your done!

Easy Peasy Orange and Lentil Salad…your guests will be asking for the recipe, guaranteed, mine always do! 
***Of course you can add anything else you like to your salad. Fresh herbs, artichoke, asparagus….the dish will be limited only by your imagination….serve it with meat, fish, chicken….whatever’s in your fridge!  Mr OC won this round – so a massive lump of lamb it was…..
